Whole Fryer Rabbits are our restaurant chefs' most popular choice.
"The terms 'fryer' or 'young rabbit' refer to a rabbit weighing not less
than 1 pound and rarely more than 3 pounds, and less than 12 weeks of age.
The flesh is tender, fine grained, mild flavored and a bright pearly pink color.
"These rabbits may be cooked in much the same way as young poultry.
Section and grill with rosemary and garlic; brush with Dijon and bread crumb; and
deep fry or braise slowly. Served with summer fruit." - Chef Le Blanc
