Our Poussin is locally raised on farms in Central New Jersey till 3 weeks of age. Poussin is modeled after French spring chickens. Each bird weighs between 16 - 19 ounces and yields a very tender and delicately flavored poultry. Even the drumstick and thigh are

Fed an all-natural diet and fresh spring water, our Poussin never receives any antibiotics or growth hormones. All our Poussin is farm-raised under stress-free conditions, allowing them to reach their natural maximum potential.
Minimally processed, USDA inspected and individually vacuum packed FRESH in a Cryovac bag; our Poussin yields an excellent shelf life. Grilling or roasting is recommended for this light, lean, poultry.

Each bird weighs approximately 16-20 ounces.

"Roasted Poussin, sweet memories of home!
Season with herbs, kosher salt, cracked black pepper.
We used to squeeze a lemon over the bird then put the lemon
in the seasoned cavity. Roast at high heat on a rack breast
side down to self marinate. Once brown, turn the bird over.
Roast until the juices from the thigh area after poked run clear,
approx. 20 minutes. Then call us when dinner is ready!"
