The "oven stuffer roaster" of Europe. This 3 - 4 lb. bird has plenty of meat for a family of four.

It's similar to chicken in appearance and color. The taste and moist meat makes it a superior choice.
Sold by the piece.

"I like to rub a pistou in the cavity and under the skin. A pistou is a classic Italian condiment consisting
of pureed garlic, lemon zest, basil, salt and pepper. Roast on a rack at 450 until the skin is brown and crispy.
Then turn the oven down to 350 and finish until the juices from the thigh are flow clear when poked."

"I like to serve this in a simple fashion by seasoning with kosher salt and fresh cracked pepper,
then pan sear skin side down until mahogany in color. Flip over and put in a 350 oven for aprox. 15
minutes. Serve over some wilted greens such as escarole."
